Nol Tenga is a sour variety of leafy herbs/creeper commonly used in the kitchens of upper Assam.
The climatic conditions of eastern(Upper) part of Assam slightly varies from the western and southern parts. At the moment Guwahati has been sweating in the sultry heat of the May sun, while my place in easternmost part of Assam is still drenching in the rains of April . This climatic difference ultimately brings in a difference in the variety of agricultural produce and eventually in the eating habits of the people.
The popularity of Nol Tenga in Upper Assam and it’s absence in the lower Assam is one example of the zonal culinary differences of Assam. Same can also be said about the varieties of rice eaten in different parts of Assam.
